Almond Butter Blueberry Smoothie

With the spring and summer months comes the hot sun, warmth, and sunburns. Spring is one of my most favorite months. I love transitioning from winter to a long awaited spring— flowers, sun, warmth, and the ability to finally enjoy the outdoors again. In my opinion, one of the best aspects of Spring and summer is the unique food groups that come with it. These foods are anything from grilled burgers and corn on the cob, to watermelon and ice cold smoothies. Growing up, my Mom would often make me smoothies in the summer as a way to cool off and enjoy a ice cold treat (that was also healthy)!

I have always loved making smoothie concoctions, and I joke you not, have probably had a smoothie every week for the past 5 years! I. LOVE. THEM. And drink them like they’re going out of style. I’ve tried so many different pairs and combinations, but this one in particular, is worthy of sharing with you. I hope you love it :)

Smoothie Recipes with Protein

Sometimes I go for tropical smoothies, and other times I go for berry smoothies. Most of the time I never measure anything out— just put it in the blender and hope for the best. They usually always turn out amazing with what I’m about to share with you…

Ultimately, I believe anyone can make a good smoothie with ingredients they have in their refrigerator. I tend to stick to the rule of 4ths: Fruit, Greens, Fat, and a base. As long as you stick to these 4 items, I truly believe you can make a good smoothie with just about any fruit/fat/base combination. Here are the basic combinations for a great smoothie…

Berry Smoothies:

  • Fruit: Berries

  • Greens: Spinach or kale

  • Fat: Almond Butter

  • Base: Milk of your choice

Tropical Smoothies:

  • Tropical Fruits: Mango, Pineapple, Strawberries

  • Greens: Spinach or kale

  • Fat: Avocado

  • Base: Orange Juice

I’ve found that these 4 components make a perfect concoction— they also help keep you full longer. The fat adds Omega-3 fatty acids, protein, and heartiness. Overall, it’s the perfect combo!

Almond Butter Blueberry Smoothie

Time: 10 minutes | Serves: 2-3

Ingredients:

  • 3 cups spinach

  • 2 cups frozen strawberries

  • 1 cup frozen blueberries

  • 2 tablespoons almond butter

  • 1 cup unsweetened vanilla almond milk

  • 1/2 cup water

  • 1 frozen banana (frozen is best, but doesn’t have to be!)

  • 1 tablespoon unflavored collagen powder

  • 1 tablespoon whole flax seed, optional (warning: this adds a lot of healthy fatty acids but does have a funny after taste)

Directions:

  1. Add all ingredients to a blender. Blend until everything is creamy and smooth, adding more milk along the way if needed. Enjoy!
