Loaded Greek Chicken Quinoa Salad with Lemon Vinaigrette

How it’s Made

This meal is SUPER simple and takes no special equipment or skills. Simply cook the quinoa, chop the veggies, cook the chicken, and mix altogether and you have an amazing meal at your fingertips.

Like I said, this meal is perfect for meal prepping because it actually tastes better the next day once all the flavors have had time to marinate together. Prep for lunches throughout the week, make for dinner the night before, store in the fridge for a small gathering, or bring it to a pot-luck. My favorite thing to do is make it the morning before a busy night and store it in the fridge the whole day to marinate together. Then, dinner is SO simple to pull out of the fridge and serve.

Nutrition wise this meal is full of healthy fatty acids from the chickpeas, lean protein from the chicken, and a plethora of beneficial vitamins and nutrients from the vegetables. It has a high amount of vitamin A, Vitamin C, as well as folate, potassium, and B vitamins. It will fuel and refresh your body!

Loaded Greek Quinoa Salad with Lemon Vinaigrette

Time: 40 minutes | Serves: 4-6 servings

Ingredients:

For the Chicken:

  • 1 lb. chicken tenders, cubed (click here for my favorite way to cube chicken)

  • 1 teaspoon garlic powder

  • 1 teaspoon oregano

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

  • 1 tablespoon olive oil

For the Salad:

  • 1 cup dried quinoa

  • 16 oz. package cherry tomatoes, cut in 4ths/8ths

  • 1 yellow bell pepper, diced

  • 1/2 English cucumber, diced

  • 1/2 red onion, diced

  • 1/2 cup parsley, minced

  • 1 16 oz. can chickpeas

  • 1/2 cup crumbled feta cheese

For the Lemon Vinaigrette:

  • Juice of 1 lemon

  • 1/4 cup extra virgin olive oil

  • 1 tablespoon red wine vinegar

  • 2 garlic cloves, minced

  • 1/2 teaspoon oregano

  • pinch each of salt and pepper to taste

Directions:

  1. For the Chicken: Season chicken with garlic powder, oregano, salt and pepper. Drizzle olive oil onto a medium pan at medium high heat. Sauté your chicken until golden brown and cooked through, about 8 minutes. Set aside until ready to assemble.

  2. For the salad: While the chicken is cooking, make the quinoa according to package instructions. Once done cooking, let cool with the lid off. In a large bowl add the chopped tomatoes, bell pepper, cucumber, red onion, parsley, chickpeas, feta, cooled quinoa, and cubed chicken. Mix until combined.

  3. For the Vinaigrette: Simply add all ingredients to a small bowl and whisk together. Pour the vinaigrette over the salad and mix until all incorporated. Taste and season with more salt and pepper, if desired. Garnish with additional parsley leaves and feta… enjoy!

    Storing Instructions: I think this meal tastes even better the next day once all the flavors have marinated together! To store, simply place plastic wrap over the bowl or place in an airtight container and store for up to 5 days. Eat for leftovers for dinner or lunch.
