Nourishing Almond Butter Brownies

Love is in the air… it’s Valentines Week! I absolutely love Valentines Day! The chocolate, hearts, love, and warm cozy food. However, it’s always so hard to find good, nourishing recipes in the midst of all the sweets and treats.

I was determined to make that different this year by making a dessert that tasted good, was nutrient dense, and actually good for my health… INTRODUCING: the best healthy brownie you’ll ever eat.

It all started with my love for almonds and almond flour in baked goods. I just love how almond flour makes baked goods so nourishing while hardly sacrificing it’s structure. But what about almond butter? I hadn’t really experimented much with was almond butter in baked goods until now. I had the idea while I was eating almond butter and chocolate together and obviously LOVED it. I thought, almond butter in brownies would actually taste pretty good! This inspired the most amazing Heaping Harvest recipe to date, in my opinion… these brownies.

These brownies are thick, amazingly fluffy, chocolate-y, a hint tart, and super decadent. In fact, the almonds are almost completely undetected when you take a bite.

Anyone else hate nuts in their brownies?

I love that these are truly so delicious, yet good for my health and will make me feel energized instead of run down. What’s not to love?

How it’s Made

These brownies have 2 types of almond products in them, coconut sugar, dark chocolate, and unsweetened cocoa powder. You make them by simply adding the wet ingredients together, the dry ingredients together, and then mixing it all into one bowl. I’ve found that these brownies are perfectly cooked at around the 17 minute mark, but you can decide how under-baked or over-baked you prefer your brownies.

You can also customize these brownies! Add walnuts, slivered almonds, sprinkles for any occasion, a dark chocolate drizzle on top, white chocolate chips, raspberry jam, caramel, and the list goes on. After the main brownie recipe is made, I encourage you to customize the toppings in a way that reflects your personal flavor preferences! I can’t wait for you to try these… they are truly so out of this world that I even surprised myself!

Nourishing Almond Butter Brownies

Time: 40 minutes | Serves: 9 Brownies

Ingredients:

  • 2/3 cup coconut sugar

  • 2 eggs

  • 1/2 cup pure almond butter (with the only ingredients as roasted almonds on the label)

  • 1 tablespoon coconut oil, melted

  • 2 teaspoons pure vanilla extract

  • 1/2 cup almond flour

  • 1/3 cup unsweetened cocoa powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon sea salt

  • 1/2 cup dark chocolate chips (mini chips would work, too!)

  • Valentines sprinkles, optional

Directions:

  1. First, preheat your oven to 350 degrees F. Prepare a 9x9” baking pan by greasing it with a little bit of canola oil. (I love USA Pans because they are non-stick!)

  2. In a medium bowl, combine the eggs and coconut sugar until combined. Then add in the almond butter, coconut oil, and vanilla. Mix until completely combined.

  3. Next, in a medium bowl, mix together your dry ingredients: almond flour, coco powder, baking soda, and salt.

  4. Pour the wet ingredients into the dry ingredients and mix until combined— do not over mix! Add in the dark chocolate chips, and mix until incorporated. The batter will be thick.

  5. Pour the batter into the prepared baking pan and bake for 17 minutes or until a toothpick inserted comes out *mostly* clean but still moist. Allow to cool for 20 minutes until enjoying!

    Note: Goes really well with some Alden’s Organic vanilla ice cream :) Leftovers last for about 4 days at room temperature in an airtight container.
