Slow Cooker Cranberry Chicken

Slow cooker Cranberry Chicken? Yesssss, please! This recipe is special to me because it comes from my Grandma’s recipe box. I often talk about how certain meals can flood memories back into your mind of days past. Every time I taste this chicken, I think of my Grandma and those fond days of sitting around the dinner table laughing and sharing stories.

Growing up, we would often go over to my Grandma’s house to eat dinner, play games, or watch FSU football. Every time I came over, I wanted my Grandma’s Cranberry chicken. Why? It was heavenly. It tasted SO good to me. Everything about this meal was comforting and honestly reminded me of a big hug. I LOVED it. As the years went on, the recipes that have always stuck out to me that my Grandma made was her Cranberry Chicken and Coconut Cake.

The recipe that you find below is not an exact replica of what I use to consume with such joy. It’s actually a much healthier and whole-food version that I think it just as amazing and delicious. In fact, when I first made it and tasted the results, my reaction was of pure happiness. I hope you find the same joy in this dish!

How it’s Made

I love recipes that entail little effort and create amazing, healthy, and delicious results. This recipe is just that. Simply adding all the ingredients into the slow cooker for 4 hours on low and POOF, you’re done! The chicken is SO tender, zesty, and tart… simply a perfect holiday or fall meal.

I love to serve this chicken with roasted potatoes and green beans but my Grandma always served it with white rice and a side salad. The rice is a great accompaniment to is, however, you could always cook up some brown rice to go with it for some extra nutrients.

Cranberry Nutrition Facts:

— Cranberries are high in Vitamin C, E, copper, and manganese.

— Cranberries are almost 90% water, but have a large amount of fiber in the remaining 10%.

— Cranberries are rich in vitamins and antioxidants, therefore they've been known to help treat urinary tract infections by preventing bacteria from adhearing to the lining of the bladder.

This recipe is full of fun Fall and Winter flavors, and is zesty, yet sweet. The combination is truly remarkable and I hope you give it a try and gain just as much joy from this meal as I did every time my Grandma made it. From my kitchen to yours… Happy Fall and Happy Cooking!

Slow Cooker Cranberry Chicken

Time: 4 hours + 10 minutes | Serves: 4

Ingredients:

  • 1 cup organic cranberry sauce

  • 1/2 cup extra virgin olive oil

  • 2 tablespoons brown sugar

  • 2 tablespoons white vinegar

  • 1/4 cup ketchup (always use NON-high-fructose-corn-syrup ketchup)

  • 1/2 teaspoon minced garlic

  • 1 teaspoon onion powder

  • 4 boneless skinless chicken breasts or 1 lb. chicken tenders

  • 1/2 cup of fresh cranberries for sprinkling, optional but recommended

Directions:

  1. First, add the cranberry sauce, olive oil, brown sugar, vinegar, ketchup, garlic, and onion powder to the bowl of a slow cooker. Mix ingredients in the crock pot until everything is combined.

  2. Next, add the chicken to the slow cooker. Turn over the chicken until completely coated with the cranberry mixture. If desired, sprinkle the fresh cranberries overtop the chicken for added color and texture in the finished product. Set your slow cooker to low heat for 4-6 hours and let cook.

  3. Once the chicken is done, serve with rice or roasted potatoes and a side salad. EAT AND ENJOY!

Note: Serve warm and keep leftovers in the refrigerator for up to one week.
