Cinnamon Spiced Granola
I don’t know about you, but granola is one of my most adored foods! It can be added to so many different snacks, desserts, or meals. But have you ever realized how pricey it is for the quantity you get?! By the time a bag of store-bought granola has been in our house for 1 day, it’s literally almost gone. It’s also so hard to distinguish which companies have your health in mind and which ones don’t. I’ve found that making foods myself, when I can control the ingredients I use, gives me so much peace of mind that nothing harmful will be in what I’m eating. This recipe spurred out of a desire to have healthy, good tasting granola, without the high price point, that is also very nutrient dense!
The pecans in this recipe truly make it pop. If you don’t like pecans, you can easily change it out for another nut, but in my opinion, they are the best additive. I also love the crunch of the almonds and the healthy fats they bring to the table. This is more of a flaky granola, so don’t expect it to be all crumpled together… Flaky granola is great, though, because it’s easier to chew and consistent throughout!
Without further adue, here is my beloved Cinnamon Spiced Granola Recipe that my husband and I devour seconds after it comes out of the oven! Enjoy & share some goodness with someone who may need it!
Cinnamon Spiced Granola
Time: 10 Minute Prep + 45 Minutes Baking | Serves: 6
Ingredients:
2 & 1/2 cups old-fashioned oats
3/4 cup pecans, roughly chopped
3/4 cup lightly salted or no salt almonds, roughly chopped
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon sea salt
1/4 cup (1/2 stick) unsalted butter, melted
1/4 cup pure maple syrup*
1 tablespoon vanilla extract
Directions:
Preheat the oven to 300°F and line a baking sheet with a Silpat* or Parchment Paper!
In a large bowl, toss together the oats, pecans, almonds, cinnamon, nutmeg and salt.
In a smaller bowl, melt the butter. Once the butter is melted, add the maple syrup and vanilla. Mix the liquid ingredients together, then pour over the oat mixture, stirring until well combined.
Spread granola onto the baking sheet and bake for 45 minutes, stirring every 15 minutes. Allow to cool completely before bagging it or putting it in an airtight container, but make sure you snag a bite while it’s still warm! Enjoy!
Notes:
Maple Syrup: Sometimes I do 1/2 cup of maple syrup if I want it sweeter and more of a dessert. For breakfast and a healthier treat I use 1/4 cup maple syrup to cut back on the sugar, but it’s totally up to you!
