Healthy Gluten FREE Banana Oat Pancakes

The smell of pancakes and bacon on a Saturday morning was typical in my house growing up. On Saturday mornings my Dad would wake up, turn on the stove, and start whipping up a batch of Aunt Jamima Banana Pancake batter. I LOVED this tradition, and honestly, I can’t remember one weekend that we skipped. I remember helping my Dad occasionally and having competitions to see who was a better pancake flipper. It was a sweet Saturday staple— after a busy week to wake up to amazing aromas and eat breakfast as a family in our pajamas. Always banana pancakes, always Saturday mornings, always a happy Jill!

As I grew up, I came to realize how much I adored this tradition and how weird it felt when I didn’t have pancakes on Saturday mornings. As I started the tradition myself, I found that there weren't a lot of pancake mixes that I loved, nor “healthier” pancake recipes that were, honestly, that good. I created this recipe out of a desire to mix the old with the new in a fresh and delicious way! And trust me, I’m a pancake connoisseur.

Sometimes I don’t always prefer healthier baked goods because I feel they lack in flavor and are too bland. BUT these pancakes are both fluffy, spiced, and moist… The trifecta for delicious and totally perfect pancakes. I also find that Maple Syrup drizzled on top makes my pancakes sweet enough, so I don’t have any added sugar included in this recipe besides the bananas. And honestly, you wouldn’t even know!

Did I mention that it’s all done in a blender?! Simply add all the ingredients and blend until combined. Then pour onto a skillet and breakfast is on the table!

When you want healthier Saturday morning pancakes, a filling weekday breakfast, or something to make ahead of time and keep in the fridge for the week, this is your recipe! Nourishing, wonderful, and SO easy. The finished product will be thick and sometimes feel more like a fritter than a pancake, so we call them a pancake & fritter combination!

These pancakes are:

  • In this recipe there is 7.5g of protein per serving (based on 3 pancakes per serving)

  • The oats help lower LDL (bad) cholesterol and raise HDL (good) cholesterol.

  • No Added Sugar

Without further adue, here is my beloved Healthy Gluten Free Banana Oat Pancake Recipe! Enjoy & make sure you serve with almond butter, maple syrup, and chopped bananas :)

Healthy Gluten FREE Banana Oat Pancakes

Time: 10 Minute Prep + 20 Minutes Cooking | Serves: 4 (3 pancakes each)

Ingredients:

  • 4 tablespoons melted virgin & unrefined coconut oil

  • 2 eggs

  • 2 teaspoons vanilla extract

  • 2 ripe bananas

  • 2 cups old fashioned oats

  • 1 teaspoon baking soda

  • 2 1/2 teaspoons baking powder

  • 2 teaspoons cinnamon

  • 1/2 teaspoon nutmeg

  • 1/2 teaspoon sea salt

Directions:

  1. Add all ingredients (in the order listed) to a blender.Blend on low speed for 30 seconds or until just combined. You don’t want to over-blend! Batter will be very thick.

  2. Pour some remaining coconut oil into a skillet at medium-low heat. Make sure the coconut oil has coated the pan to avoid the pancakes from sticking.

  3. Once the skillet is at a warm temperature, use a cookie scoop to scoop 1/2 cup of dough onto the pan at a time. It will be a very thick and bubbly dough which gives it that fluffiness! Flip once golden on the bottom. Repeat steps until completed with all the dough.

  4. Serve the pancakes warm and with maple syrup, almond butter, and banana chunks! ENJOY!
